The DeSoto Hires Executive Chef JP Filion

The award-winning DeSoto recently hired JP Filion as their Executive Chef. In this role, he will use his expertise and experience to oversee all culinary operations for The DeSoto’s award-winning restaurants: 1540 Room, Edgar’s Proof & Provision, and Buffalo Bayou. Filion is also responsible for hiring, training, and overseeing kitchen staff; planning and directing food preparation and culinary activities; as well as creating seasonal and special event menus.

Filion has extensive international experience in the culinary industry. Most recently he served as Executive Chef at the Bohemian Hotel Savannah. Prior to moving to Savannah, Filion served as International Project Chef with London Based company Living Hospitality; organizing high end catering at exclusive & highly publicized international events. Before that, he was the Executive Chef at Koa Kea Hotel and Resort located on Kauai, HI.

Filion is originally from Vancouver and received his Culinary Management degree from Algonquin College in Ottawa, Canada. Since then he’s shared his culinary expertise all over the world; from Russia, Brazil, and the UL, to Korea and Hong Kong.

The DeSoto is excited to have Filion onboard, bringing his wealth of knowledge to the table, new items to each of our menus and a new outlook to our restaurants and special events. He loves calling Historic Savannah home and in his free time works closely with EmployAbility, a group in Savannah that prepares adults with developmental disabilities, for employment and community integration.
