Savannah’s Newest Restaurant, 1540 Room, Officially Opens

1540 Room, a chef-driven culinary experience derived from the very best locally-sourced ingredients Savannah has to offer and housed in the recently-renovated DeSoto, officially opened on Friday, September 1. It will be led by renowned Chef Proprietor Kyle Jacovino.

The 1540 Room will offer southern-infused, Mediterranean-inspired cuisine and decadent desserts made from locally-sourced ingredients. Hours of operation are Tuesday through Thursday 5-10 p.m., Friday and Saturday 5-11 p.m. and Sunday 10:30 a.m.-3 p.m. Reservations can be made on opentable.com.

“We are excited to open 1540 Room as a complement to Edgar’s Proof & Provision, both located in the newly-renovated DeSoto,” said Jeff Kmiec, managing director of The DeSoto. “Our guests are going to love 1540 Room and what Chef Jacovino creates for them.”

Earlier this year, the 127-year-old iconic hotel on Liberty Street underwent a massive, multimillion-dollar renovation and total restructuring of offerings and services. In addition to the two new restaurants, the hotel upgraded its 246 guestrooms, and built out a new terrace pool & cabana bar and a gourmet-to-go coffee bar.

Jacovino came to The DeSoto and 1540 Room from The Florence in Savannah, where he was executive chef. He also worked as head of the kitchen at Hugh Acheson’s flagship restaurant, Five & Ten in Athens, Ga., and was executive sous chef at Empire State South in Atlanta.  He studied in Italy for four months to learn about pizza and pasta-making techniques.
